Louisville chef to open Italian restaurant with Southern twist in the Highlands

A new Italian restaurant with a Southern influence is set to open in Louisville’s Highlands neighborhood this spring.

Cipollini is scheduled to open March 27, 2026, in the former LouVino space on Bardstown Road. The previous restaurant closed in September 2024 after operating for a decade.

Chef Dallas McGarity, founder of The Fat Lamb and winner of Food Network’s Chopped in 2019, has partnered with Tarek Hamada and A.J. Miller to launch the new concept.

The name “Cipollini,” which means “little onions” in Italian, reflects the restaurant’s approach to blending traditional Italian cooking with a modern Southern perspective.

“Cipollini is about simple layers, honest flavor and the beauty of what happens when something humble is elevated with care,” McGarity said. “We wanted to create something elegant yet familiar.”

The menu will feature house-made pastas and seasonal ingredients sourced from regional farms, emphasizing fresh and locally inspired dishes.

The restaurant plans to operate from 5 to 10 p.m., Tuesday through Saturday.
